advice on the piña coco smoothie
i just got back from vacation in puerto rico where I rode horses on the beach, snorkeled, tried to drink my weight in coco frîo & rum punch, oh & i also got ENGAGED. needless to say after such an amazing trip i've had a slight case of those post-vacation blues. i've found that the best cure is to consume things that taste like suntan lotion. for me this means drinking coconut la croix and piña coco smoothies. vacation blues evaporate! i usually buy pre-made refrigerated coconut milk for my tea/cereal/baking needs but i realized it is super easy to make at home and the taste is much better. plus a lot of milk alternatives have added junk that i am skeptical of- like carrageenan- which i've heard isn't great for you- jury might still be out on that but i'd rather not risk it.
when not on a beach drink this to make you think you are on a beach. this smoothie is one step away from being a killer piña colada, and the only reason i didn't take it there is because i am still feeling the hangover from rum punches i had on the last day of my vacation. so i'm trying out this thing where i see if i can not drink for the month of february because it's the shortest month (although today i found out it is a leap year...).

piña coco smoothie
1 can of low fat coconut milk
1 tbsp raw honey
1/2 cup of frozen pineapple chunks
1 tbsp protein powder (i use vega vanilla)
1 tbsp of raw shelled hemp seeds + more to garnish
first make coconut milk- pour can of coconut milk into blender and with a rubber spatula scrape out any remaining coconut cream. add in raw honey and blend for about 30 seconds. pour into a container and store for up to 5 days in refrigerator. use in place of soy or almond milk in hot tea or coffee.
then make the smoothie-in a blender combine coconut milk, pineapple, protein powder, hemps seeds and blend on high until no pineapple chunks remain. serve with some extra hemp seeds sprinkled on top.
