advice on smashed cakes
smashing cukes is fun. once you do it you'll think to yourself "why haven't i been smashing cukes sooner?" the main benefit of smashing is increased surface area for the salt and vinegar to lightly cure the cukes. also the result is a rustic and unique looking salad.

i got these really nice japanese cukes from the half pint farm stand- if you have a hard time finding them i'd recommend using the long thin skinned cucumbers that are called by one of these names english/persian/european.

the way to go
1 japanese cucumber (persian or english would work well too)
1 tsp salt
3 tbsp rice vinegar
sprinkling of togarashi (or sesame seeds and chili powder)
thinly sliced scallions for garnish
whack whole cucumber with a rolling pin lightly until it splits. then with your hands break pieces of cucumber off into a colander, sprinkle cucumber with salt and let it sit in colander for 10 minutes. next drain any liquid off cucumbers and place them into a bowl with rice vinegar, togarashi, and scallion. toss lightly and let sit for another 10 minutes and serve.
