is this thing on? man, it's been a while, i hope you haven't forgot about me. what can i say but i've been busy. isn't that always the excuse though? i did get married back in september, which took up a lot of...stuff. the whole thing was tops, i mean stressful- don't get me wrong, but down to the rain/rainbow blessing we couldn't have been happier. here's proof of the nuptials. since then there's been other things, trips to LA, trips home, work stuff, and oh yes a return to barcelona! my most favorite city. hasn't changed too much. man, i missed that place, i missed it's street tiles, it's good cheap wine, and it's medieval stench. i got to share the city with my virgo twin jesse and we saw so much art and architecture i felt like we were stockpiling culture (insert google itinerary here). anyway enough with the lame excuses i'm back and hoping to stay back for the forseeable future. i'll start my return with a really simple yet incredible tasty salad.

the way to go
for the pepitas
1/2 cup pumpkin seeds or pepitas
2 tsps maple syrup
1 tsp olive oil
big pinch of salt
for the salad
2 small delicata squash
1 tbsp thyme leaves
2 tbsp olive oil
3 handfuls of mixed greens
2 tbsps crumbled goat cheese (i used cypress grove purple haze -it's soooo good)
1 tbsp agrumato olive oil (tangerine olive oil, or 1 tablespoon olive oil with 1 tablespoon tangerine or orange juice)
juice from 1/2 of a lemon
salt
line a small ovenproof saute pan (or sheetpan) with parchement and toss pepitas with oilve oil, maple syrup, and a pinch of salt. roast in a 350 degree oven for 9 minutes. remove and let cool.
preheat oven to 425, cut delicata squash lengthwise and scoop out the seeds and pulp. slice in thin half moons. toss with olive oil on a sheet pan and sprinkle with salt liberally. roast for 20-25 minutes or until golden and translucent. remove from oven and let cool for at least 10 minutes. right before serving toss mixed greens with agrumato, lemon, and a pinch of salt. then add in squash pieces and toss a couple of times. to serve mound a handful of lettuce onto a plate and top with goat cheese crumbles and pepitas.
