advice on salad
always make your own dressing and make a good sized batch, it will last for a couple of weeks in the fridge. use good quality olive oil//vinegars and emulsify the two with some honey//maple syrup//mustard. save old mustard or jam glass jars with lids and re-use them to shake up a batch of dressing.

i'd eat this salad for lunch or to balance out a pizza dinner. this salad travels real well, i brought some on a road trip and it held up great in the car. also marcona almonds are like crack, how are they so damn good??

makes enough for 4
reduced balsamic dressing
1/2 cup balsamic vinegar
1 tbsp honey
1/4 cup olive oil
generous pinch of salt
fresh cracked pepper
in a small saucepan heat vinegar on medium and cook until reduced for about 5 minutes. add honey to vinegar and let cool for 10 minutes. in a small bowl whisk oil and reduced vinegar together until emulsified. add salt and pepper to taste.
for the salad
1 cup of cherries sliced in half and pitted
1 cup of cooked and cooled quinoa
1/2 cup of marcona almonds
3 cups of arugula
1/4 cup of goat cheese
in a salad bowl combine quinoa and arugula and toss lightly add cherries, almonds, and goat cheese on top and drizzle dressing on top until evenly coated, toss to combine and serve.
