advice on super green spring stir fry
I like spring. mostly i like it because it means summer is close. this year though spring is being real lazy. yeah sure the trees are budding, but the temps- man the temps are forgetting to wake up! luckily the plants are still doing their thing and I was able to pick up some nice wild ramps at the co-op this week. the only bummer about ramps is if you keep them in the fridge they start to smell a little funky- so use em' quick.

spring veg is where it’s at. the seasoning of this stir fry could match well with other veggies too- and next time i am going to add some tofu and rice to elevate the dish from a side to a meal.

the way to go
serves 2
1 tbsp of grapeseed oil
2 garlic cloves
1 tbsp of ginger grated
1 tsp of red curry paste
1 tbsp of tamari (or soy sauce)
a handful of cleaned and trimmed string bean cut into thirds
1 small zucchini halved and then quartered lengthwise and chopped into 2 inch pieces
5 stalks of asparagus chopped into small rounds, about 1/4 inch in thickness
a handful of ramps, cleaned well with the root removed and chopped into 2 inch pieces
cilantro chopped for garnish
basil chiffonade for garnish
a few slices of lime for garnish
sauté garlic and ginger in a large skillet on medium until translucent and fragrant. add in curry paste and cook until carmelized, about 3 minutes. add in soy sauce and then add in green beans, zucchini, asparagus and sauté until tender, about 3- 4 minutes. you want the veggies to be tender but still green. add in ramps and sauté another minute. remove the skillet from heat and spoon veggies into a serving dish. garnish with cilantro, basil, and limes.
